Tarta de Santiago

Galician almond cake with the cross of Santiago in icing sugar.

Ingredients

  • 250 g of ground almond
  • 250 g of sugar
  • 5 eggs
  • the zest of one lemon
  • 1 teaspoon of cinnamon
  • icing sugar to decorate
  • butter for the mould

Step-by-step

Choose your robot:
  1. Put the eggs and the sugar in the mixing bowl and beat 4 min/speed 4.
  2. Add the lemon zest and the cinnamon and mix 10 sec/speed 3.
  3. Add the ground almond and mix 20 sec/speed 3.
  4. Grease the mould and pour the batter.
  5. Bake at 180°C for 30 minutes.
  6. Check the baking with a toothpick and let it cool.
  7. Place the cross stencil and dust with icing sugar.

Tips

  • Good-quality almond makes the difference.
  • Remove the stencil carefully to leave the cross marked.
