Tocino de cielo
Andalusian sweet made of egg yolks and syrup with caramel.

Ingredients
- 12 egg yolks
- 1 whole egg
- 250 g of sugar for the syrup
- 150 ml of water
- the peel of half a lemon
- 100 g of sugar for the caramel
Step-by-step
Choose your robot:
- Make the caramel with the 100 g of sugar and distribute it in the mould.
- Put the water, the 250 g of sugar and the lemon peel in the mixing bowl and program 12 min/100°C/speed 1.
- Remove the lemon peel and let the syrup cool down.
- Put the yolks and the egg in the mixing bowl and mix 20 sec/speed 3.
- Add the warm syrup in a thin stream and mix 30 sec/speed 3.
- Strain the mixture and pour it into the caramelised mould.
- Cook in a bain-marie in the oven at 150°C for 30 minutes.
- Let it cool and refrigerate before unmoulding.
Tips
- The syrup must be warm so as not to curdle the yolks suddenly.
- Always strain the mixture for a fine texture.
