Venezuelan Black Cake
Dark Christmas cake with dried fruit macerated in wine and rum.

Ingredients
- 300 g dried fruit (raisins, prunes, figs), macerated in wine and rum
- 250 g butter
- 250 g brown sugar
- 5 eggs
- 300 g flour
- 1 teaspoon baking powder
- 2 tablespoons papelón or panela syrup
- 1 teaspoon ground cinnamon and cloves
Step-by-step

- Macerate the chopped dried fruit ahead of time in red wine and rum for several days.
- Blend the macerated fruit 10 sec/speed 6 and set aside.
- Put the butter and brown sugar in the mixing bowl and beat 2 min/speed 4 until creamed.
- Add the eggs one at a time, mixing 20 sec/speed 4 between each one.
- Add the flour, baking powder, spices and syrup and mix 30 sec/speed 4.
- Fold in the blended fruit with the spatula, pour into a mold and bake at 160°C for 75 min.
Tips
- The longer you macerate the fruit, the deeper the flavor will be.
- Brush with rum syrup as soon as it comes out of the oven to keep it moist.
