Ingredients

  • 2 eggs
  • 180 g of sugar
  • 280 g of flour
  • 120 ml of sunflower oil
  • 180 ml of milk
  • 1 sachet of baking powder (16 g)
  • 150 g of blueberries
  • 1 teaspoon of vanilla extract
  • 1 pinch of salt

Step-by-step

Choose your robot:
  1. Preheat the oven to 190C.
  2. Add the eggs and the sugar and beat 1 min/speed 4.
  3. Add the oil, the milk and the vanilla and mix 20 sec/speed 3.
  4. Add the flour, the baking powder and the salt and mix 15 sec/speed 3 without overmixing.
  5. Coat the blueberries in a little flour and add them with the spatula.
  6. Divide the batter into muffin liners filling three quarters.
  7. Bake 20 min at 190C until golden.
  8. Let cool on a rack.

Tips

  • Do not overmix the batter so they stay tender.
  • Floured blueberries do not sink to the bottom.
  • Serve slightly warm.
