Ingredients
- 500 g strong bread flour
- 270 g warm water
- 15 g fresh yeast
- 20 g sugar
- 9 g salt
- 1 tablespoon honey for the boiling water
- Sesame or seeds for decorating
Step-by-step
Choose your robot:
- Put the water, yeast and sugar in the mixing bowl and set 2 min/37°C/speed 2.
- Add the flour and salt and mix 20 sec/speed 6.
- Knead 5 min/closed bowl/dough mode.
- Let the dough rise in a covered bowl until doubled in volume, about 50 min.
- Divide into eight portions, shape into balls and make a hole in the centre of each one.
- Let the shaped bagels rest 20 min.
- Boil water with the honey and cook each bagel 1 min on each side.
- Drain, place on the tray and sprinkle seeds.
- Bake in a preheated oven at 210°C for 20 min until golden.
- Let cool on a rack.
Tips
- The pre-boiling gives the shiny crust and the typical dense crumb.
- You can fill them afterwards with cream cheese and salmon.
