Egg white omelette with spinach
A fluffy, protein-rich, low-fat omelette, perfect for athletes.

Ingredients
- 4 egg whites (140 g)
- 1 whole egg
- 60 g fresh spinach
- 20 g onion
- 1 teaspoon extra virgin olive oil
- Salt and pepper to taste
- A pinch of garlic powder
Step-by-step
Choose your robot:
- Put the onion in the mixing bowl and chop 3 sec/speed 5.
- Add the oil and saute 3 min/120°C/speed 1.
- Add the spinach and saute 3 min/100°C/speed 1 until it reduces.
- Drain the excess liquid and set the saute aside.
- Put the whites, the egg, the salt, the pepper and the garlic in the mixing bowl and beat 20 sec/speed 4.
- Mix the beaten egg with the spinach and set in a non-stick pan 3 minutes on each side.
- Serve freshly made while it is fluffy.
Tips
- Nutritional note: egg whites are pure protein with almost no fat, ideal after training.
- Add a little fresh whipped cheese for more creaminess without gaining weight.
- Do not overcook the spinach to preserve its green color.
