Shrimp Patties in Romeritos Mole
Romeritos greens in mole with dried shrimp patties, a festive dish.
Ingredients
- 300 g cleaned romeritos (seepweed)
- 100 g ground dried shrimp
- 3 eggs
- 3 mulato peppers
- 2 ancho peppers
- 1 tomato
- 2 garlic cloves
- 1/2 onion
- 40 g Mexican drinking chocolate (tablet)
- 2 potatoes, cooked and diced
- Salt to taste
- 600 g broth

- For the patties, separate the egg whites and whip them with the butterfly whisk 4 min/speed 3.5; fold in the yolks and ground dried shrimp 20 sec/speed 3. Fry spoonfuls in oil and set aside.
- Rehydrate the peppers 10 minutes. Put them in the mixing bowl with the tomato, garlic, onion and 200 g broth. Blend 1 min/speed 9 and strain.
- Return the sauce to the mixing bowl with the rest of the broth and the chocolate. Set 15 min/100°C/speed 2.
- Cook the romeritos separately 5 minutes and drain them; add them to the mole with the potatoes. Cook 10 min/100°C/reverse/spoon speed.
- Carefully add the shrimp patties and heat 5 min/90°C/reverse/spoon speed.
- Serve hot.
Tips
- Don't overdo the dried shrimp since it already adds a lot of saltiness.
- Add the patties at the end so they don't fall apart.
