Majorcan tumbet

Vegetables fried and baked in layers with tomato sauce, a dish from Majorca.

Ingredients

  • 2 potatoes
  • 1 eggplant
  • 2 red bell peppers
  • 1 onion
  • 3 garlic cloves
  • 500 g crushed tomato
  • 60 g extra virgin olive oil
  • 1 teaspoon sugar
  • 700 g water
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Cut the potatoes, the eggplant and the peppers into slices and place them in the Varoma and the tray.
  2. Put the water in the mixing bowl and cook 25 min/Varoma/speed 1 until they are tender. Set aside and empty the water.
  3. Chop the onion and garlic 4 sec/speed 5, add the oil and saute 7 min/Varoma/spoon speed.
  4. Add the tomato, the sugar, the salt and the pepper. Set 15 min/Varoma/reverse/spoon speed.
  5. In an oven dish place layers of potato, eggplant and pepper, salting each layer.
  6. Cover with the tomato sauce and bake 15 minutes at 180C.
  7. Let rest a few minutes and serve.

Tips

  • Traditionally the vegetables are fried, but steamed it turns out lighter.
  • Tumbet is even better warm or cold.
  • Serve with a fried egg in the non-vegan version.
