Gratin scallops

Baked scallops with sofrito and a bread and garlic gratin.

Ingredients

  • 8 scallops in their shell
  • 1 onion
  • 2 garlic cloves
  • 100 g white wine
  • 40 g extra virgin olive oil
  • 50 g breadcrumbs
  • 1 bunch of parsley
  • 1 pinch of sweet paprika
  • Salt to taste

Step-by-step

Choose your robot:
  1. Clean the scallops, separating the meat from the shell and reserve both.
  2. Put the onion and a garlic clove in the mixing bowl and chop 4 sec/speed 5.
  3. Add the oil and saute 8 min/120°C/spoon speed.
  4. Pour in the white wine and program 3 min/100°C/speed 1 to reduce.
  5. Spread the sofrito in the shells and place the scallop meat on top.
  6. Put the breadcrumbs, the remaining garlic and the parsley in the mixing bowl and blend 5 sec/speed 7.
  7. Sprinkle the bread mixture over the scallops along with a pinch of paprika.
  8. Gratin in the oven at 200°C for 8 minutes until golden.
  9. Serve the scallops hot in their shell.

Tips

  • Do not over-gratin so the scallop stays juicy.
  • You can add a touch of chopped ham to the sofrito.
  • Serve as an elegant starter.
