Ingredients
- 8 scallops in their shell
- 1 onion
- 2 garlic cloves
- 100 g white wine
- 40 g extra virgin olive oil
- 50 g breadcrumbs
- 1 bunch of parsley
- 1 pinch of sweet paprika
- Salt to taste
Step-by-step
Choose your robot:
- Clean the scallops, separating the meat from the shell and reserve both.
- Put the onion and a garlic clove in the mixing bowl and chop 4 sec/speed 5.
- Add the oil and saute 8 min/120°C/spoon speed.
- Pour in the white wine and program 3 min/100°C/speed 1 to reduce.
- Spread the sofrito in the shells and place the scallop meat on top.
- Put the breadcrumbs, the remaining garlic and the parsley in the mixing bowl and blend 5 sec/speed 7.
- Sprinkle the bread mixture over the scallops along with a pinch of paprika.
- Gratin in the oven at 200°C for 8 minutes until golden.
- Serve the scallops hot in their shell.
Tips
- Do not over-gratin so the scallop stays juicy.
- You can add a touch of chopped ham to the sofrito.
- Serve as an elegant starter.
