Zucchini stuffed with vegetables
Steamed zucchini stuffed with a gratinated vegetable saute.

Ingredients
- 4 medium zucchini
- 1 onion
- 1 red bell pepper
- 2 garlic cloves
- 1 carrot
- 200 g crushed tomato
- 50 g extra virgin olive oil
- 1 teaspoon oregano
- 700 g water
- Salt and pepper to taste
- Breadcrumbs for gratin
Step-by-step
Choose your robot:
- Cut the zucchini in half lengthwise and hollow them out with a spoon reserving the pulp.
- Place the hollowed zucchini in the Varoma. Put the water in the mixing bowl and cook 15 min/Varoma/speed 1. Set aside.
- Empty the mixing bowl. Chop the onion, the pepper, the carrot and the garlic 4 sec/speed 5.
- Add the oil and saute 8 min/Varoma/spoon speed.
- Add the chopped pulp, the tomato, the oregano, the salt and the pepper. Set 10 min/Varoma/reverse/spoon speed.
- Fill the zucchini with the saute and sprinkle with breadcrumbs.
- Gratin in the oven 10 minutes until they brown.
Tips
- Do not hollow out the zucchini completely so it holds the filling.
- Add grated cheese when gratinating in the non-vegan version.
- The leftover saute is ideal to accompany pasta.
