Zacatecas Wedding Asado
Pork in a thick sauce of chilies, chocolate and crackers, sweet and spicy.
Ingredients
- 1 kg pork loin, diced
- 5 ancho peppers
- 2 guajillo peppers
- 3 garlic cloves
- 1 onion
- 2 tomatoes
- 30 g Mexican drinking chocolate (tablet)
- 4 Maria-type cookies
- 1 cinnamon stick
- 2 cloves
- 1 tablespoon vinegar
- Salt to taste
- 700 g pork broth
Step-by-step

- Sear the pork cubes in a pan and set aside with their juices.
- Rehydrate the peppers 10 minutes. Put them in the mixing bowl with the garlic, onion, tomatoes, cookies, cinnamon and cloves. Blend 1 min/speed 9.
- Add 300 g broth and blend 30 sec/speed 8; strain if you prefer.
- Return to the mixing bowl with the rest of the broth and the vinegar. Set 15 min/100°C/speed 2.
- Add the meat and chocolate. Cook 30 min/100°C/reverse/spoon speed until thickened.
- Adjust the salt and serve with white rice.
Tips
- The sweet-spicy balance is this dish's signature.
- If it gets too thick, add hot broth little by little.
