Asado Negro
Beef braised in a dark panela sauce, juicy and traditional from Caracas.

Ingredients
- 1 kg beef eye round roast
- 100 g grated papelón (raw cane sugar) or brown sugar
- 1 onion
- 1 red bell pepper
- 4 garlic cloves
- 3 tomatoes
- 2 tablespoons Worcestershire sauce
- Oil, salt and pepper to taste
- 500 g water or broth

- Marinate the meat with salt, pepper and crushed garlic, and let it rest 30 min outside the mixing bowl.
- Put 40 g oil and the papelón in the mixing bowl, heat 6 min/120°C/speed 1 until the caramel turns golden.
- Sear the meat in that caramel in a separate pan on all sides until it turns dark.
- Put the onion, bell pepper and tomatoes in the mixing bowl, chop 5 sec/speed 5.
- Add 30 g oil and sauté 10 min/120°C/spoon speed.
- Add the seared meat, water and Worcestershire sauce, cook 70 min/100°C/reverse/spoon speed with the measuring cup tilted.
- Remove the meat, let cool slightly and slice; blend the sauce 20 sec/speed 6 and pour it over the meat.
Tips
- The secret is in getting the papelón caramel nice and dark without burning it.
- Serve with white rice and fried plantain slices.
