Ingredients
- 1.2 kg lamb, in chunks
- 4 guajillo peppers, seeded
- 2 pasilla peppers, seeded
- 4 garlic cloves
- 1 teaspoon cumin
- 2 avocado leaves
- 2 bay leaves
- 1 teaspoon oregano
- Salt to taste
- Maguey or banana leaves
- 800 g water

- Rehydrate the peppers in hot water 10 minutes. Drain and put them in the mixing bowl with the garlic, cumin, oregano and 150 g water. Blend 1 min/speed 8.
- Spread the adobo over the lamb pieces and let rest 20 minutes.
- Line the Varoma dish with maguey or banana leaves and arrange the meat with the bay leaves and avocado leaves.
- Put the water in the mixing bowl, place the Varoma dish and set 90 min/Varoma/speed 1.
- Check that the meat shreds easily; if not, add 15 more minutes.
- Serve with warm tortillas, salsa borracha and lime.
Tips
- The juice that drips into the mixing bowl makes a delicious consommé to serve on the side.
- If you can't find avocado leaves, don't substitute them with anything else strong-flavored.
