Ingredients
- 1 kg of hen or chicken pieces
- 1 onion and 2 cloves of garlic
- 2 carrots in slices
- 1 bell pepper chopped
- 2 tomatoes chopped
- 1.5 liters of water
- 200 g of cornmeal
- 100 g of grated fresh cheese
- 50 g of wheat flour
- 1 egg
- Oil, annatto, cumin and salt
- Chopped parsley and cilantro
Step-by-step
Choose your robot:
- Chop onion, garlic, tomato and bell pepper 5 sec/speed 5.
- Saute with annatto and oil 7 min/120C/spoon speed.
- Add the chicken pieces and brown 5 min/Varoma/reverse/spoon speed.
- Add water, cumin, salt and carrot and cook 35 min/100C/reverse/spoon speed.
- For the bori bori, mix by hand cornmeal, flour, cheese, egg and a little broth until a moldable dough.
- Form little balls the size of a walnut with your hands.
- Drop the balls into the boiling broth and cook 12 min/100C/reverse/spoon speed until they float.
- Adjust the salt, add parsley and cilantro and serve very hot.
Tips
- The little balls should be firm but tender; do not make them too big.
- Hen broth provides more flavor than that of young chicken.
- Serve it freshly made so the bori bori do not fall apart.
