Paraguayan bori bori

Hen broth with little balls of cornmeal and cheese.

Ingredients

  • 1 kg of hen or chicken pieces
  • 1 onion and 2 cloves of garlic
  • 2 carrots in slices
  • 1 bell pepper chopped
  • 2 tomatoes chopped
  • 1.5 liters of water
  • 200 g of cornmeal
  • 100 g of grated fresh cheese
  • 50 g of wheat flour
  • 1 egg
  • Oil, annatto, cumin and salt
  • Chopped parsley and cilantro

Step-by-step

Choose your robot:
  1. Chop onion, garlic, tomato and bell pepper 5 sec/speed 5.
  2. Saute with annatto and oil 7 min/120C/spoon speed.
  3. Add the chicken pieces and brown 5 min/Varoma/reverse/spoon speed.
  4. Add water, cumin, salt and carrot and cook 35 min/100C/reverse/spoon speed.
  5. For the bori bori, mix by hand cornmeal, flour, cheese, egg and a little broth until a moldable dough.
  6. Form little balls the size of a walnut with your hands.
  7. Drop the balls into the boiling broth and cook 12 min/100C/reverse/spoon speed until they float.
  8. Adjust the salt, add parsley and cilantro and serve very hot.

Tips

  • The little balls should be firm but tender; do not make them too big.
  • Hen broth provides more flavor than that of young chicken.
  • Serve it freshly made so the bori bori do not fall apart.
