Ingredients
- 800 g pork, diced
- 5 guajillo peppers
- 2 ancho peppers
- 3 garlic cloves
- 1/2 onion
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt to taste
- 500 g water
Step-by-step

- Sear the pork in a pan and set aside with its juices.
- Rehydrate the peppers 10 minutes. Put them in the mixing bowl with the garlic, onion, cumin, oregano and 200 g water. Blend 1 min/speed 9 and strain.
- Pour the sauce into the mixing bowl with the pork and the rest of the water. Set 40 min/100°C/reverse/spoon speed.
- Check that the meat is tender; if not, add 10 more minutes.
- Adjust the salt.
- Serve with rice, beans and corn tortillas.
Tips
- Strain the sauce well for a velvety texture.
- A bit of diluted masa helps thicken the stew.
