Mexican Churros with Sugar and Cinnamon
Churros crispy outside and soft inside, rolled in cinnamon sugar.

Ingredients
- 250 g water
- 60 g butter
- 1 pinch salt
- 200 g flour
- 2 eggs
- Vegetable oil for frying
- 100 g sugar for coating
- 1 teaspoon ground cinnamon
Step-by-step

- Put the water, butter and salt in the mixing bowl and heat 5 min/100°C/speed 1.
- Add the flour all at once and mix 15 sec/speed 4 until a dough forms.
- Let cool slightly 5 min and add the eggs one at a time, mixing 20 sec/speed 4 between each one.
- Transfer the dough to a piping bag with a star-shaped nozzle.
- Heat plenty of oil in a pan over medium heat and pipe churros about 12 cm long.
- Fry until golden, drain on paper towels.
- Mix the sugar with the cinnamon and coat the churros while still hot.
Tips
- Use a star-shaped nozzle for the classic ridges.
- Serve with hot chocolate or cajeta (caramel sauce).
