White Cocadas
Shredded coconut and milk sweets, traditional from the Colombian Caribbean.

Ingredients
- 300 g shredded coconut
- 200 g sugar
- 200 g milk
- 100 g condensed milk
- 1 teaspoon vanilla extract
- 1 pinch salt

- Put the sugar and milk in the mixing bowl and set 6 min/100°C/speed 1 to make a syrup.
- Add the shredded coconut, condensed milk, vanilla and salt.
- Set 18 min/Varoma/reverse/speed 1 without the measuring cup until the mixture thickens.
- Check that you can see the bottom of the bowl when you pull the spatula through — that's the sign it's ready.
- Spoon small mounds onto a tray lined with baking paper.
- Let dry and cool at room temperature until firm.
- Store in an airtight container.
Tips
- For golden cocadas, use panela instead of sugar.
- Stir the mixture carefully near the end so it doesn't stick.
