Ingredients

  • 500 g peas (fresh or frozen)
  • 1 spring onion
  • 1 small potato, in chunks
  • 500 g vegetable stock
  • 10 fresh mint leaves
  • 30 g extra virgin olive oil
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Put the spring onion in the mixing bowl and chop 4 sec/speed 5.
  2. Add the oil and saute 5 min/120°C/spoon speed.
  3. Add the potato and the stock and set 12 min/100°C/speed 1.
  4. Add the peas and cook 6 min/100°C/speed 1 to keep the colour.
  5. Add the mint and blend 1 min/speed 5-10 progressively.
  6. Season and adjust the salt.
  7. Serve hot or cold with a drizzle of oil.

Tips

  • Do not overcook the peas to preserve the bright green.
  • A little yogurt when serving adds creaminess if not vegan.
