Pea and mint cream soup
Bright green pea cream with fresh mint, light and vibrant.

Ingredients
- 500 g peas (fresh or frozen)
- 1 spring onion
- 1 small potato, in chunks
- 500 g vegetable stock
- 10 fresh mint leaves
- 30 g extra virgin olive oil
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the spring onion in the mixing bowl and chop 4 sec/speed 5.
- Add the oil and saute 5 min/120°C/spoon speed.
- Add the potato and the stock and set 12 min/100°C/speed 1.
- Add the peas and cook 6 min/100°C/speed 1 to keep the colour.
- Add the mint and blend 1 min/speed 5-10 progressively.
- Season and adjust the salt.
- Serve hot or cold with a drizzle of oil.
Tips
- Do not overcook the peas to preserve the bright green.
- A little yogurt when serving adds creaminess if not vegan.
