Green broccoli and pea soup

Ingredients

  • 300 g broccoli florets
  • 150 g peas
  • 1 leek (120 g)
  • 1 small potato (100 g)
  • 600 g vegetable stock
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • A few leaves of fresh mint

Step-by-step

Choose your robot:
  1. Put the leek in the mixing bowl and chop 4 sec/speed 5.
  2. Add the oil and saute 5 min/120°C/speed 1.
  3. Add the broccoli, the peas, the potato and the stock.
  4. Program 18 min/100°C/speed 1 with the basket on top of the lid.
  5. Season with salt and pepper and add the mint leaves.
  6. Blend the soup 1 min/speed 5-9 progressively without adding cream.
  7. Check that it is smooth and serve hot.

Tips

  • Nutritional note: the intense green indicates a large supply of chlorophyll and vitamins.
  • The mint adds freshness and helps digestion.
  • Do not overcook to keep the vivid color.
