Green broccoli and pea soup
A vibrant green soup without cream, rich in fiber and very filling.

Ingredients
- 300 g broccoli florets
- 150 g peas
- 1 leek (120 g)
- 1 small potato (100 g)
- 600 g vegetable stock
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
- A few leaves of fresh mint
Step-by-step
Choose your robot:
- Put the leek in the mixing bowl and chop 4 sec/speed 5.
- Add the oil and saute 5 min/120°C/speed 1.
- Add the broccoli, the peas, the potato and the stock.
- Program 18 min/100°C/speed 1 with the basket on top of the lid.
- Season with salt and pepper and add the mint leaves.
- Blend the soup 1 min/speed 5-9 progressively without adding cream.
- Check that it is smooth and serve hot.
Tips
- Nutritional note: the intense green indicates a large supply of chlorophyll and vitamins.
- The mint adds freshness and helps digestion.
- Do not overcook to keep the vivid color.
