Avocado and pea cream
Green, silky avocado dip with peas, mint and lime.

Ingredients
- 2 ripe avocados
- 150 g frozen peas
- A few fresh mint leaves
- 1 garlic clove
- The juice of 1 lime
- 30 g extra virgin olive oil
- Salt and pepper to taste
- 500 g water
Step-by-step
Choose your robot:
- Put the water in the mixing bowl, place the basket with the peas and set 8 min/Varoma/speed 1.
- Remove the basket, refresh the peas with cold water and set aside.
- Empty the water from the mixing bowl and add the garlic and the mint, chop 4 sec/speed 5.
- Add the avocado flesh, the peas and the lime juice.
- Blend 20 sec/speed 6 until you get a cream.
- With the blades running at speed 4, add the oil through the lid opening.
- Add salt and pepper and blend 15 sec/speed 5.
- Transfer to a bowl and serve with tortilla chips or crudites.
Tips
- Refresh the peas in cold water to keep the green color.
- Add a touch of chili if you like it spicy.
- Consume on the same day to prevent it from oxidizing.
