Avocado and pea cream

Ingredients

  • 2 ripe avocados
  • 150 g frozen peas
  • A few fresh mint leaves
  • 1 garlic clove
  • The juice of 1 lime
  • 30 g extra virgin olive oil
  • Salt and pepper to taste
  • 500 g water

Step-by-step

Choose your robot:
  1. Put the water in the mixing bowl, place the basket with the peas and set 8 min/Varoma/speed 1.
  2. Remove the basket, refresh the peas with cold water and set aside.
  3. Empty the water from the mixing bowl and add the garlic and the mint, chop 4 sec/speed 5.
  4. Add the avocado flesh, the peas and the lime juice.
  5. Blend 20 sec/speed 6 until you get a cream.
  6. With the blades running at speed 4, add the oil through the lid opening.
  7. Add salt and pepper and blend 15 sec/speed 5.
  8. Transfer to a bowl and serve with tortilla chips or crudites.

Tips

  • Refresh the peas in cold water to keep the green color.
  • Add a touch of chili if you like it spicy.
  • Consume on the same day to prevent it from oxidizing.
