Pumpkin and ginger soup without cream
A velvety pumpkin soup with a spicy touch of ginger.

Ingredients
- 600 g pumpkin, diced
- 1 onion (80 g)
- 1 carrot (80 g)
- 1 teaspoon grated ginger
- 600 g vegetable stock
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
- Pumpkin seeds to garnish
Step-by-step
Choose your robot:
- Put the onion in the mixing bowl and chop 4 sec/speed 5.
- Add the oil and the ginger and saute 5 min/120°C/speed 1.
- Add the pumpkin, the carrot and the vegetable stock.
- Program 20 min/100°C/speed 1 with the basket on top of the lid.
- Season with salt and pepper to taste.
- Blend the soup 1 min/speed 5-9 progressively without adding cream.
- Check that it is smooth and adjust the salt.
- Serve with pumpkin seeds on top.
Tips
- Nutritional note: pumpkin is very low in calories and rich in beta-carotenes.
- The ginger adds a digestive and slightly spicy touch.
- For more body add a small potato.
