Pumpkin and ginger soup without cream

Ingredients

  • 600 g pumpkin, diced
  • 1 onion (80 g)
  • 1 carrot (80 g)
  • 1 teaspoon grated ginger
  • 600 g vegetable stock
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Pumpkin seeds to garnish

Step-by-step

Choose your robot:
  1. Put the onion in the mixing bowl and chop 4 sec/speed 5.
  2. Add the oil and the ginger and saute 5 min/120°C/speed 1.
  3. Add the pumpkin, the carrot and the vegetable stock.
  4. Program 20 min/100°C/speed 1 with the basket on top of the lid.
  5. Season with salt and pepper to taste.
  6. Blend the soup 1 min/speed 5-9 progressively without adding cream.
  7. Check that it is smooth and adjust the salt.
  8. Serve with pumpkin seeds on top.

Tips

  • Nutritional note: pumpkin is very low in calories and rich in beta-carotenes.
  • The ginger adds a digestive and slightly spicy touch.
  • For more body add a small potato.
