Ingredients

  • 400 g green asparagus
  • 1 leek (120 g)
  • 1 small potato (100 g)
  • 600 g vegetable stock
  • 1 tablespoon extra virgin olive oil
  • Salt and white pepper to taste
  • A few asparagus tips to garnish

Step-by-step

Choose your robot:
  1. Set aside a few asparagus tips to garnish and chop the rest.
  2. Put the leek in the mixing bowl and chop 4 sec/speed 5.
  3. Add the oil and saute 5 min/120°C/speed 1.
  4. Add the chopped asparagus, the potato and the stock.
  5. Program 18 min/100°C/speed 1 with the basket on top of the lid.
  6. Meanwhile, steam the reserved tips 8 min/Varoma/speed 1.
  7. Season with salt and pepper and blend the soup 1 min/speed 5-9 progressively without adding cream.
  8. Serve with the steamed tips on top.

Tips

  • Nutritional note: asparagus is diuretic and very low in calories.
  • Reserving the tips gives a more attractive presentation.
  • The potato provides body without the need for cream.
