Green asparagus soup without cream
A fine, elegant green asparagus soup, light and spring-like.

Ingredients
- 400 g green asparagus
- 1 leek (120 g)
- 1 small potato (100 g)
- 600 g vegetable stock
- 1 tablespoon extra virgin olive oil
- Salt and white pepper to taste
- A few asparagus tips to garnish
Step-by-step
Choose your robot:
- Set aside a few asparagus tips to garnish and chop the rest.
- Put the leek in the mixing bowl and chop 4 sec/speed 5.
- Add the oil and saute 5 min/120°C/speed 1.
- Add the chopped asparagus, the potato and the stock.
- Program 18 min/100°C/speed 1 with the basket on top of the lid.
- Meanwhile, steam the reserved tips 8 min/Varoma/speed 1.
- Season with salt and pepper and blend the soup 1 min/speed 5-9 progressively without adding cream.
- Serve with the steamed tips on top.
Tips
- Nutritional note: asparagus is diuretic and very low in calories.
- Reserving the tips gives a more attractive presentation.
- The potato provides body without the need for cream.
