Carrot and orange soup
A sweet, light carrot soup with a citrus touch, without cream.

Ingredients
- 500 g carrot, sliced
- 1 onion (80 g)
- 1 small potato (100 g)
- The juice of 1 orange
- 600 g vegetable stock
- 1 tablespoon extra virgin olive oil
- 1 teaspoon grated ginger
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the onion in the mixing bowl and chop 4 sec/speed 5.
- Add the oil and the ginger and saute 5 min/120°C/speed 1.
- Add the carrot, the potato and the stock.
- Program 20 min/100°C/speed 1 with the basket on top of the lid.
- Add the orange juice, the salt and the pepper.
- Blend the soup 1 min/speed 5-9 progressively without adding cream.
- Check the texture and serve hot.
Tips
- Nutritional note: the carrot provides beta-carotenes and the orange vitamin C.
- The ginger enhances the natural sweetness of the carrot.
- If you prefer it thicker, reduce the stock a little.
