Carrot and orange soup

Ingredients

  • 500 g carrot, sliced
  • 1 onion (80 g)
  • 1 small potato (100 g)
  • The juice of 1 orange
  • 600 g vegetable stock
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Step-by-step

Choose your robot:
  1. Put the onion in the mixing bowl and chop 4 sec/speed 5.
  2. Add the oil and the ginger and saute 5 min/120°C/speed 1.
  3. Add the carrot, the potato and the stock.
  4. Program 20 min/100°C/speed 1 with the basket on top of the lid.
  5. Add the orange juice, the salt and the pepper.
  6. Blend the soup 1 min/speed 5-9 progressively without adding cream.
  7. Check the texture and serve hot.

Tips

  • Nutritional note: the carrot provides beta-carotenes and the orange vitamin C.
  • The ginger enhances the natural sweetness of the carrot.
  • If you prefer it thicker, reduce the stock a little.
