Ingredients
- 12 empanada dough discs
- 500 g ground or knife-cut beef
- 2 onions
- 1 scallion
- 2 potatoes
- 2 hard-boiled eggs
- 30 g oil
- Salt, pepper, cumin and ground chili to taste
Step-by-step

- Cut the potatoes into small cubes, place them in the steamer basket with 500 g water. Set 12 min/Varoma/speed 1. Set aside.
- Empty the mixing bowl. Add the onions and chop 4 sec/speed 4. Add the oil and sauté 8 min/Varoma/speed 1.
- Add the beef, cumin, ground chili, salt and pepper. Set 10 min/Varoma/reverse/spoon speed.
- Turn the filling into a bowl, add the potato, scallion and chopped eggs. Chill in the fridge.
- Fill the dough discs, close with a crimped edge and brush with egg.
- Bake at 200°C for 15 to 18 min until golden.
Tips
- Chilling the filling well makes assembling easier.
- A touch of the cooking juices keeps the empanadas juicy.
