Ingredients

  • 150 g pitted dates
  • 80 g raw almonds
  • 30 g rolled oats
  • 1 tablespoon pure cocoa powder
  • 1 tablespoon peanut butter
  • 1 pinch of salt
  • Grated coconut for coating

Step-by-step

Choose your robot:
  1. Put the almonds in the mixing bowl and blend 8 sec/speed 6 until they are in small pieces.
  2. Add the dates, the oats, the cocoa, the peanut butter and the salt.
  3. Blend 20 sec/speed 6 until you get a sticky, homogeneous dough.
  4. Check that the dough binds when pressed; if it is dry, add 1 more date and repeat 10 sec/speed 6.
  5. Form little balls with slightly damp hands.
  6. Coat each ball in grated coconut.
  7. Refrigerate 30 minutes so they firm up before serving.

Tips

  • Nutritional note: natural energy from the dates and good fats from the nuts.
  • They keep up to a week in the fridge in a closed container.
  • Swap the coconut for cocoa or sesame to vary.
