Warm sweet potato and quinoa salad
A nutritious salad with steamed sweet potato, quinoa and greens.

Ingredients
- 150 g rinsed quinoa
- 400 g water
- 1 sweet potato (250 g) diced
- 60 g arugula
- 30 g chopped walnuts
- 1 tablespoon balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Step-by-step
Choose your robot:
- Put the rinsed quinoa and the salted water in the mixing bowl.
- Place the diced sweet potato in the Varoma dish.
- Set the Varoma and program 18 min/Varoma/spoon speed to cook the quinoa and sweet potato at the same time.
- Remove the Varoma and drain the quinoa; let it cool slightly.
- Mix the quinoa with the steamed sweet potato, still warm, in a bowl.
- Add the arugula, the walnuts and the balsamic and oil vinaigrette.
- Season with salt and pepper, stir gently and serve warm.
Tips
- Nutritional note: the sweet potato provides slow-absorbing carbs and fiber.
- The walnuts add good fats and a crunchy touch.
- Serve warm so the arugula does not wilt.
