Warm lentil and vegetable salad
A nutritious lentil salad with steamed vegetables, served warm.

Ingredients
- 250 g cooked and drained lentils
- 1 zucchini (150 g) in sticks
- 1 red bell pepper (120 g) in strips
- 1 carrot (80 g) in sticks
- 1 tablespoon apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 1 teaspoon mustard
- Salt and pepper to taste
- A handful of lamb's lettuce
- 700 g water
Step-by-step
Choose your robot:
- Put the water in the mixing bowl.
- Place the zucchini, the bell pepper and the carrot in the Varoma dish.
- Set the Varoma in position and program 15 min/Varoma/speed 1.
- Meanwhile, prepare the vinaigrette mixing vinegar, oil, mustard, salt and pepper.
- Mix the lentils with the steamed vegetables, still warm, in a bowl.
- Add the lamb's lettuce and the vinaigrette and stir gently.
- Serve warm so the flavors blend.
Tips
- Nutritional note: a combination of legume and vegetable, very filling and low in fat.
- Serve warm, as it is more comforting than cold.
- Add sunflower seeds for a crunchy touch.
