Open Beef Esfiha (Esfiha Aberta)
Flat Arab-origin pastries topped with spiced ground beef.
Ingredients
- 500 g flour
- 10 g dry yeast
- 250 ml warm milk
- 60 ml oil
- 1 teaspoon salt
- 1 tablespoon sugar
- 400 g ground beef
- 2 tomatoes
- 1 onion
- Juice of 1 lime
- Chopped mint, salt and pepper to taste
Step-by-step

- Put the milk, sugar and yeast. Heat 1 min/37°C/speed 1 and let activate 5 min.
- Add the flour, oil and salt. Knead 4 min/closed lid/dough mode. Let rise 1 hour.
- Chop the onion and tomato 4 sec/speed 4. Drain off the liquid.
- Mix with the beef, lime juice, mint, salt and pepper 20 sec/reverse/speed 3.
- Shape dough discs, place the raw filling on top without covering it.
- Bake at 200°C for about 15 min until the base is golden.
Tips
- Drain the filling well so the dough doesn't turn out soggy.
- Serve with a splash of lime when eating.
