Ingredients
- 1.5 kg pork, in chunks
- 1 white onion
- 4 garlic cloves
- 1 tablespoon cumin
- 300 ml water
- Juice of 2 oranges
- 2 tablespoons annatto oil
- Salt and pepper to taste
Step-by-step

- Put the onion and garlic in the mixing bowl and chop 5 sec/speed 5.
- Add the cumin, salt, pepper, orange juice and water and mix 10 sec/speed 3.
- Add the pork and cook 50 min/100°C/reverse/spoon speed with the measuring cup in place.
- Remove the measuring cup and let reduce 20 min/Varoma/reverse/spoon speed until the liquid evaporates.
- Once it releases its fat, brown the meat, stirring, until crispy on the outside.
- Serve with hominy, ripe plantain, corn, pickled onion and avocado.
Tips
- Let the meat brown in its own fat for the traditional flavor.
- Bitter orange juice is ideal if you can find it.
