Humita in Corn Husk
Creamy corn paste cooked wrapped in corn husks.

Ingredients
- 8 fresh corn cobs with their husks
- 1 onion
- 1 red bell pepper
- 2 garlic cloves
- 100 ml cream
- 100 g fresh cheese, diced
- 1 teaspoon sweet paprika
- 30 ml oil
- Salt, pepper and a pinch of sugar
Step-by-step

- Carefully separate the husks from the corn, wash them and set aside. Remove the kernels from the cobs.
- Put the onion, bell pepper and garlic in the mixing bowl. Blend 4 sec/speed 5.
- Add the oil and sauté 6 min/Varoma/speed 1.
- Add the corn kernels and paprika. Blend 15 sec/speed 6 into a thick paste.
- Add the cream, salt, pepper and sugar. Cook 15 min/100°C/reverse/speed 1 until thickened.
- Let cool slightly and fold in the diced fresh cheese with the spatula.
- Assemble the humitas by placing the paste on two crossed husks, close them like little parcels and tie with strips of husk.
- Put 600 ml water in the clean mixing bowl. Arrange the humitas in the Varoma and cook 30 min/Varoma/speed 1.
Tips
- Choose tender corn for a sweeter, creamier paste.
- Serve them hot; they're also delicious sprinkled with sugar.
