Classic hummus
Creamy Arab puree of chickpeas, tahini, lemon and cumin.

Ingredients
- 400 g cooked chickpeas, drained
- 3 tablespoons tahini
- 2 garlic cloves
- Juice of 1 lemon
- 4 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon salt
- 80 ml cold water
- Paprika to garnish
Step-by-step
Choose your robot:
- Put the garlic in the mixing bowl and chop 3 sec/speed 7.
- Add the chickpeas, the tahini, the lemon, the cumin and the salt.
- Blend 1 min/speed 7 scraping down the sides.
- Add the cold water little by little and blend 1 min/speed 8.
- Add the oil and emulsify 30 sec/speed 6 until silky.
- Serve with a thread of oil and sprinkled paprika.
Tips
- Very cold water helps a fluffier texture.
- Peel the chickpeas for an extra-smooth hummus.
