Classic hummus

Ingredients

  • 400 g cooked chickpeas, drained
  • 3 tablespoons tahini
  • 2 garlic cloves
  • Juice of 1 lemon
  • 4 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 80 ml cold water
  • Paprika to garnish

Step-by-step

Choose your robot:
  1. Put the garlic in the mixing bowl and chop 3 sec/speed 7.
  2. Add the chickpeas, the tahini, the lemon, the cumin and the salt.
  3. Blend 1 min/speed 7 scraping down the sides.
  4. Add the cold water little by little and blend 1 min/speed 8.
  5. Add the oil and emulsify 30 sec/speed 6 until silky.
  6. Serve with a thread of oil and sprinkled paprika.

Tips

  • Very cold water helps a fluffier texture.
  • Peel the chickpeas for an extra-smooth hummus.
