Arabic pita
Flatbread that puffs up forming a pocket, ideal for filling.

Ingredients
- 500 g wheat flour
- 300 g warm water
- 10 g fresh yeast
- 1 teaspoon sugar
- 8 g salt
- 20 g olive oil
Step-by-step
Choose your robot:
- Put the water, yeast and sugar in the mixing bowl and set 2 min/37°C/speed 2.
- Add the flour, salt and oil and mix 20 sec/speed 6.
- Knead 4 min/closed bowl/dough mode.
- Let the dough rise in a covered bowl until doubled in volume, about 60 min.
- Divide the dough into eight balls and let them rest 15 min.
- Roll out each ball into a thin disc with a rolling pin.
- Preheat the oven with the tray inside at maximum 250°C.
- Place the discs on the very hot tray.
- Bake 5 min until they puff up forming the pocket.
- Wrap in a cloth when taking them out so they stay soft.
Tips
- The blast of heat is what makes the pita puff up.
- Do not let them brown too much so they keep their flexibility.
