Ingredients

  • 500 g wheat flour
  • 300 g warm water
  • 10 g fresh yeast
  • 1 teaspoon sugar
  • 8 g salt
  • 20 g olive oil

Step-by-step

Choose your robot:
  1. Put the water, yeast and sugar in the mixing bowl and set 2 min/37°C/speed 2.
  2. Add the flour, salt and oil and mix 20 sec/speed 6.
  3. Knead 4 min/closed bowl/dough mode.
  4. Let the dough rise in a covered bowl until doubled in volume, about 60 min.
  5. Divide the dough into eight balls and let them rest 15 min.
  6. Roll out each ball into a thin disc with a rolling pin.
  7. Preheat the oven with the tray inside at maximum 250°C.
  8. Place the discs on the very hot tray.
  9. Bake 5 min until they puff up forming the pocket.
  10. Wrap in a cloth when taking them out so they stay soft.

Tips

  • The blast of heat is what makes the pita puff up.
  • Do not let them brown too much so they keep their flexibility.
