Ingredients

  • 400 g cooked and drained chickpeas
  • 1 tablespoon tahini
  • 1 clove of garlic
  • The juice of 1 lemon
  • 1 tablespoon extra virgin olive oil
  • 60 g cold water
  • 1 teaspoon ground cumin
  • Salt to taste
  • Paprika to garnish

Step-by-step

Choose your robot:
  1. Put the garlic in the mixing bowl and chop 3 sec/speed 5.
  2. Add the chickpeas, the tahini, the lemon juice, the cumin and the salt.
  3. Blend 30 sec/speed 6 scraping down the walls halfway.
  4. Add the oil and the cold water little by little.
  5. Blend 1 min/speed 7 until very creamy.
  6. Check the texture and add a little more water if you want it smoother.
  7. Serve with a drizzle of oil and sprinkled paprika.

  • Nutritional note: using water instead of more oil reduces calories without losing creaminess.
  • Pair with veggie sticks for a healthy snack.
  • Reserving the cooking water from the chickpeas gives a silkier texture.
