Ingredients
- 300 g fine semolina
- 100 g flour
- 150 g melted butter
- 60 g orange blossom water
- 50 g milk
- 1 teaspoon baking powder
- For the filling: 250 g date paste
- 1 teaspoon cinnamon
- Powdered sugar to decorate
Step-by-step

- Put the semolina, flour, baking powder and butter in the mixing bowl. Mix 30 sec/speed 4.
- Add the orange blossom water and milk. Knead 2 min, lid closed, dough mode. Let rest 30 min.
- Mix the date paste with the cinnamon and shape into filling balls.
- Take portions of dough, flatten them, add the filling and seal into balls.
- Press a pattern with a maamoul mold or a fork and place on a baking tray.
- Bake at 170°C for about 20 min without letting them brown too much. Dust with powdered sugar once cool.
Tips
- They shouldn't brown much — they stay pale and soft.
- Orange blossom water is the traditional aromatic essence of these cookies.
