Mandocas from Zulia

Fried corn and plantain rings sweetened with papelon, typical of Zulia.

Ingredients

  • 1 large ripe plantain
  • 100 g of papelon in pieces
  • 150 g of water
  • 250 g of precooked corn flour
  • 100 g of grated white cheese
  • 1 teaspoon of sweet anise
  • 1 pinch of salt
  • Plenty of oil for frying

Step-by-step

Choose your robot:
  1. Put the papelon and water in the mixing bowl and dissolve 6 min/90 degrees/speed 2 forming a syrup.
  2. Add the ripe plantain in pieces and blend 15 sec/speed 5.
  3. Add the grated cheese, anise and salt and mix 10 sec/speed 3.
  4. Add the precooked corn flour and knead 1 min/dough speed until a workable dough forms.
  5. Let the dough rest 5 minutes so it hydrates completely.
  6. Shape little rolls and join them at the ends, giving them a ring or figure-eight shape.
  7. Fry the mandocas in hot oil at 170 degrees for 4 minutes until golden and drain on paper.

Tips

  • If the dough sticks, dampen your hands with a little water.
  • Serve them hot at breakfast spread with butter or cream.
  • The sweet and savory balance of the papelon with the cheese makes them irresistible.
