Butter Medialunas (Croissants)
Classic sweet Argentine bakery croissants glazed with syrup.

Ingredients
- 500 g flour (000)
- 250 g butter for laminating
- 60 g sugar
- 25 g fresh yeast
- 200 g warm milk
- 2 egg yolks
- 1 teaspoon salt
- 150 g sugar for the syrup
- 100 g water
Step-by-step

- Put the milk, yeast, sugar, egg yolks, salt and flour in the mixing bowl; knead 4 min/closed lid/dough mode.
- Let the dough rise covered 1 hour until doubled.
- Roll out the dough, place the butter on it and make simple folds with cold rests in between.
- Roll out thin, cut triangles and roll them up to form the croissants.
- Let rise 45 min and bake 15 min at 190°C.
- For the syrup, cook the water and sugar 7 min/100°C/speed 1 and brush on while hot.
Tips
- Work the dough cold so the butter doesn't melt.
- The syrup gives them their typical shine.
