Homemade Potato Noquis
Soft potato gnocchi for the classic 29th, with a sauce of your choice.

Ingredients
- 1 kg of potatoes
- 300 g of 0000 flour
- 1 egg
- 50 g of grated cheese
- 1 pinch of nutmeg
- 1 teaspoon of salt
- 400 g of tomato sauce
- Basil leaves
- Grated cheese to serve
Step-by-step
Choose your robot:
- Boil the potatoes with their skin until tender, peel them and mash them while hot. Let cool slightly.
- Place the potato puree, the egg, the grated cheese, the nutmeg and the salt in the mixing bowl.
- Add the flour and mix 20 sec/speed 4.
- Knead 2 min/closed mixing bowl/dough mode until combined; the dough should be tender and not sticky.
- Form thin rolls on the floured counter and cut the gnocchi to 2 cm.
- Pass each gnocchi over the back of a fork to mark the ridges.
- Boil in plenty of salted water; they are ready when they rise to the surface.
- Drain and serve with hot tomato sauce, basil and grated cheese.
Tips
- Use floury potatoes and add the minimum flour possible so they stay light.
- Mash them while hot and work the dough while barely warm.
- On the 29th, bills are placed under the plate to attract prosperity.
