Homemade Potato Noquis

Soft potato gnocchi for the classic 29th, with a sauce of your choice.

Ingredients

  • 1 kg of potatoes
  • 300 g of 0000 flour
  • 1 egg
  • 50 g of grated cheese
  • 1 pinch of nutmeg
  • 1 teaspoon of salt
  • 400 g of tomato sauce
  • Basil leaves
  • Grated cheese to serve

Step-by-step

Choose your robot:
  1. Boil the potatoes with their skin until tender, peel them and mash them while hot. Let cool slightly.
  2. Place the potato puree, the egg, the grated cheese, the nutmeg and the salt in the mixing bowl.
  3. Add the flour and mix 20 sec/speed 4.
  4. Knead 2 min/closed mixing bowl/dough mode until combined; the dough should be tender and not sticky.
  5. Form thin rolls on the floured counter and cut the gnocchi to 2 cm.
  6. Pass each gnocchi over the back of a fork to mark the ridges.
  7. Boil in plenty of salted water; they are ready when they rise to the surface.
  8. Drain and serve with hot tomato sauce, basil and grated cheese.

Tips

  • Use floury potatoes and add the minimum flour possible so they stay light.
  • Mash them while hot and work the dough while barely warm.
  • On the 29th, bills are placed under the plate to attract prosperity.
