Cheese Bread (Pão de Queijo)

Ingredients

  • 250 g cassava starch (polvilho)
  • 120 ml milk
  • 60 ml water
  • 60 g oil
  • 2 eggs
  • 120 g grated parmesan cheese
  • 80 g grated semi-hard cheese
  • 5 g salt

Step-by-step

Choose your robot:
  1. Put the milk, water, oil and salt in the mixing bowl and heat 5 min/90°C/speed 2.
  2. Add the cassava starch and mix 30 sec/speed 4 to scald the dough.
  3. Let it cool for 10 minutes with the dough in the mixing bowl.
  4. Add the eggs one at a time, mixing 20 sec/speed 4 each time.
  5. Add the grated cheeses and knead 1 min/dough mode.
  6. With oiled hands form small balls and place them on the tray with baking paper.
  7. Bake 20 to 25 minutes at 190°C until golden and puffed.
  8. Serve hot, fresh from the oven.

Tips

  • If the dough is sticky, moisten your hands with oil.
  • You can freeze the raw balls and bake them straight away.
  • Use polvilho azedo for a more traditional flavor.
