Cheese Bread (Pão de Queijo)
Fluffy, chewy little rolls of cassava starch and cheese.

Ingredients
- 250 g cassava starch (polvilho)
- 120 ml milk
- 60 ml water
- 60 g oil
- 2 eggs
- 120 g grated parmesan cheese
- 80 g grated semi-hard cheese
- 5 g salt
Step-by-step
Choose your robot:
- Put the milk, water, oil and salt in the mixing bowl and heat 5 min/90°C/speed 2.
- Add the cassava starch and mix 30 sec/speed 4 to scald the dough.
- Let it cool for 10 minutes with the dough in the mixing bowl.
- Add the eggs one at a time, mixing 20 sec/speed 4 each time.
- Add the grated cheeses and knead 1 min/dough mode.
- With oiled hands form small balls and place them on the tray with baking paper.
- Bake 20 to 25 minutes at 190°C until golden and puffed.
- Serve hot, fresh from the oven.
Tips
- If the dough is sticky, moisten your hands with oil.
- You can freeze the raw balls and bake them straight away.
- Use polvilho azedo for a more traditional flavor.
