Ingredients
- 400 g flour (000)
- 250 g warm water
- 15 g fresh yeast
- 20 g oil
- 1 teaspoon salt
- 2 onions
- 150 g pancetta
- 300 g mozzarella
- Oregano to taste

- Put the water, yeast, oil, salt and flour in the mixing bowl. Set 3 min/closed lid/dough mode. Let rise 40 min.
- Cut the onions into thin strips and the pancetta into strips.
- Roll out the dough in an oiled pizza pan and pre-bake 6 min at 230°C.
- Cover with the mozzarella, onion, pancetta and oregano.
- Bake at 230°C for 10 to 12 min until the pancetta browns and the cheese melts.
- Remove, let rest a minute and cut into slices.
Tips
- Pre-baking the dough keeps it crisp while the onion stays juicy.
- The pancetta adds salt, so go easy on the salt in the dough.
