Chia pudding with berries

Ingredients

  • 40 g chia seeds
  • 300 g unsweetened almond drink
  • 1 teaspoon vanilla essence
  • 1 teaspoon agave syrup
  • 100 g assorted red berries
  • 1 tablespoon grated coconut
  • A few mint leaves to garnish

Step-by-step

Choose your robot:
  1. Put the almond drink, the vanilla and the agave syrup in the mixing bowl.
  2. Mix 30 sec/speed 3 to integrate.
  3. Add the chia seeds and mix 20 sec/speed 2.
  4. Divide the mixture into two glasses and stir by hand after 5 minutes so it does not clump.
  5. Refrigerate at least 4 hours or all night until it sets.
  6. Top with the red berries and the grated coconut.
  7. Garnish with mint and serve cold.

Tips

  • Nutritional note: chia provides fiber, plant-based omega 3 and a lot of fullness.
  • Stir after the first few minutes to avoid lumps.
  • Sweeten to taste with fruit instead of more syrup.
