Chia pudding with berries
A healthy breakfast or dessert of chia with plant-based drink and fruit.

Ingredients
- 40 g chia seeds
- 300 g unsweetened almond drink
- 1 teaspoon vanilla essence
- 1 teaspoon agave syrup
- 100 g assorted red berries
- 1 tablespoon grated coconut
- A few mint leaves to garnish
Step-by-step
Choose your robot:
- Put the almond drink, the vanilla and the agave syrup in the mixing bowl.
- Mix 30 sec/speed 3 to integrate.
- Add the chia seeds and mix 20 sec/speed 2.
- Divide the mixture into two glasses and stir by hand after 5 minutes so it does not clump.
- Refrigerate at least 4 hours or all night until it sets.
- Top with the red berries and the grated coconut.
- Garnish with mint and serve cold.
Tips
- Nutritional note: chia provides fiber, plant-based omega 3 and a lot of fullness.
- Stir after the first few minutes to avoid lumps.
- Sweeten to taste with fruit instead of more syrup.
