Molcajete Red Salsa
Spicy salsa of roasted tomato and arbol chile, with a smoky flavor.

Ingredients
- 500 g of ripe tomato
- 4 dried arbol chiles
- 2 garlic cloves
- 1/4 white onion
- 1 teaspoon of salt
- 1 tablespoon of chopped cilantro (optional)
Step-by-step
Choose your robot:
- Put the halved tomatoes, the onion and the garlic in the mixing bowl with 100 g of water. Program 10 min/100°C/speed 1.
- Separately toast the arbol chiles dry for a few seconds in a pan, until they become aromatic.
- Add the toasted chiles and the salt to the mixing bowl.
- Blend 40 sec/speed 7 until you get a salsa with a light texture.
- Taste and adjust the spiciness and the salt.
- Serve with chopped cilantro to taste.
Tips
- For more spiciness, leave the seeds of the chiles.
- Roasting the tomatoes directly over the fire intensifies the smoky flavor.
