Teriyaki sauce
Sweet and savory Japanese sauce with the shine of soy and mirin.

Ingredients
- 120 g of soy sauce
- 80 g of mirin
- 40 g of sake
- 50 g of sugar
- 1 teaspoon of grated ginger
- 1 clove of garlic
- 10 g of corn flour
- 30 g of water
Step-by-step
Choose your robot:
- Put the garlic and ginger in the mixing bowl and chop 4 sec/speed 7.
- Add the soy, mirin, sake and sugar.
- Set 8 min/100°C/speed 1 so it reduces and integrates.
- Dissolve the corn flour in the water and add it through the lid opening.
- Set 4 min/90°C/speed 2 until the sauce thickens and shines.
- Strain if you wish and let it cool before glazing.
Tips
- Use tamari for a gluten-free version.
- Glaze chicken, salmon or tofu by brushing at the end of cooking.
- It keeps for several weeks in the fridge.
