Ingredients

  • 120 g of soy sauce
  • 80 g of mirin
  • 40 g of sake
  • 50 g of sugar
  • 1 teaspoon of grated ginger
  • 1 clove of garlic
  • 10 g of corn flour
  • 30 g of water

Step-by-step

Choose your robot:
  1. Put the garlic and ginger in the mixing bowl and chop 4 sec/speed 7.
  2. Add the soy, mirin, sake and sugar.
  3. Set 8 min/100°C/speed 1 so it reduces and integrates.
  4. Dissolve the corn flour in the water and add it through the lid opening.
  5. Set 4 min/90°C/speed 2 until the sauce thickens and shines.
  6. Strain if you wish and let it cool before glazing.

Tips

  • Use tamari for a gluten-free version.
  • Glaze chicken, salmon or tofu by brushing at the end of cooking.
  • It keeps for several weeks in the fridge.
