Colombian Black Cake
Christmas cake of macerated fruit, raw sugar and spices, dark and moist.

Ingredients
- 300 g candied fruit and raisins, macerated in fruit juice
- 250 g flour
- 200 g grated panela (raw cane sugar)
- 200 g softened butter
- 4 eggs
- 100 g dark panela syrup (melao)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves and nutmeg
- 1 packet baking powder
Step-by-step

- Put the butter and panela in the mixing bowl and beat 1 min/speed 4.
- Add the eggs one at a time and the syrup, mixing 40 sec/speed 4.
- Add the spices, flour and baking powder and mix 40 sec/speed 3.
- Add the drained macerated fruit and mix 20 sec/reverse/speed 2.
- Pour into a greased mold lined with baking paper.
- Bake at 160°C for 80 minutes until a toothpick comes out clean.
- Let cool and brush with a bit of the fruit juice to keep it moist.
Tips
- Macerate the fruit ahead of time for a more intense flavor.
- Bake at a low temperature so it doesn't burn on the outside.
