Ingredients
- 800 g cassava (yuca)
- 350 g crispy pork cracklings
- 300 g cabbage
- 2 tomatoes
- 1 onion
- 2 congo peppers or chili to taste
- 60 ml vinegar
- 1 lime
- Salt to taste
- 1 liter water
Step-by-step

- Peel and chop the cassava. Cook it in the mixing bowl with 1 liter water and salt 25 min/Varoma/reverse/spoon speed. Drain.
- Shred the cabbage and chop it with the tomato and onion 4 sec/speed 4.
- Dress the curtido with vinegar, lime, chili and salt. Mix and let rest 10 min.
- On a banana leaf, place the cassava, top with the chopped cracklings and finish with the curtido.
- Serve right away so the cracklings stay crispy.
Tips
- The curtido needs to rest so the flavors come together.
- Serve on a banana leaf for the traditional touch.
