Viudo de Pescado (River Fish Stew)
Fish cooked with cassava and plantain, river style.

Ingredients
- 600 g catfish or river fish, in chunks
- 2 green plantains
- 300 g cassava (yuca)
- 3 potatoes
- 1 onion
- 2 tomatoes
- 3 garlic cloves
- 1 bunch cilantro
- 1 liter water
- Juice of 1 lime
- Salt and cumin to taste
Step-by-step

- Chop the onion, tomato and garlic: 4 sec/speed 5 and sauté: 5 min/Varoma/speed 1.
- Add the water, plantain and cassava: 20 min/100°C/reverse/spoon speed.
- Add the potatoes: 10 min/100°C/reverse/spoon speed.
- Place the fish, marinated in lime, in the steaming basket: 15 min/Varoma/speed 1.
- Add cilantro, salt and cumin to the broth and serve with the fish on top.
Tips
- Steaming the fish keeps it from falling apart.
- This is a traditional dish from the banks of Colombia's rivers.
