Ingredients
- 300 g short noodles
- 4 tablespoons ají amarillo paste
- 1 onion
- 2 garlic cloves
- 100 g fresh cheese
- 150 g evaporated milk
- 50 g bread, soaked
- 30 g oil
- Walnuts or peanuts to taste
- 900 g water, salt and pepper
Step-by-step

- Cook the noodles in a separate pot with water and salt according to the package. Drain and set aside.
- Put the onion and garlic in the mixing bowl, chop 4 sec/speed 5 and scrape down with the spatula.
- Add the oil and ají amarillo. Sauté 6 min/120°C/speed 1.
- Add the soaked bread, cheese, milk and a little water. Blend 30 sec/speed 7.
- Heat the sauce 4 min/90°C/speed 2 until slightly thickened.
- Mix the noodles with the sauce. Serve with chopped walnuts or peanuts on top.
Tips
- Adjust the ají amarillo to your desired heat.
- Serve with a hard-boiled egg and olives like a causa.
