Ingredients
- 700 g beef heart, diced
- 3 tablespoons ground ají panca or ají colorado
- 3 garlic cloves
- 1 teaspoon cumin
- 2 tablespoons vinegar
- 4 cooked potatoes to serve
- Ground peanuts for the sauce
- Oil, salt, oregano and pepper to taste

- Chop the garlic 5 sec/speed 5. Mix with the ají panca, cumin, vinegar, oregano, salt and oil: 20 sec/speed 4 to make the marinade.
- Marinate the heart in the marinade at least 2 hours in the fridge.
- Thread the cubes onto skewers.
- Grill on a barbecue or hot griddle until browned outside and juicy inside.
- For the peanut sauce: blend peanuts with a bit of the marinade and water 30 sec/speed 7.
- Serve the skewers with cooked potato and peanut sauce.
Tips
- Don't overcook the heart or it will turn tough — it should be juicy.
