Arroz Tapado (Layered Rice)
Layers of rice with a ground beef filling, Lima style.

Ingredients
- 4 cups cooked white rice
- 400 g ground beef
- 1 red onion
- 3 garlic cloves
- 2 tomatoes
- 1 tablespoon ají panca paste
- 1/4 cup raisins
- 2 hard-boiled eggs
- 1/4 cup olives
- Oil, salt and pepper
Step-by-step

- Chop the onion, garlic and tomato 4 sec/speed 5 and sauté with oil 5 min/120°C/speed 1.
- Add the ají panca and sauté 2 min/120°C/speed 1.
- Add the ground beef and cook 12 min/Varoma/reverse/spoon speed.
- Add the raisins and chopped olives. Cook 3 min/100°C/reverse/spoon speed. Adjust the salt.
- Assemble in a mold: a layer of rice, the filling with hard-boiled egg, another layer of rice. Press and unmold.
- Serve with fried plantain and salsa criolla.
Tips
- Use a bowl or mold to shape the layers and unmold nicely.
- The raisins balance the flavor with a touch of sweetness.
