Figs with Arequipe
Figs in raw-sugar syrup filled with arequipe, a classic dessert.

Ingredients
- 12 breva figs (green figs)
- 300 g grated panela (raw cane sugar)
- 700 g water
- 1 cinnamon stick
- 300 g arequipe (dulce de leche)
Step-by-step

- Make a cross-shaped cut at the base of each fig without separating it completely.
- Put the water, panela and cinnamon in the mixing bowl and set 8 min/100°C/speed 1.
- Place the figs in the steaming basket, insert it into the mixing bowl and set 45 min/100°C/speed 1.
- Check that the figs are soft and well soaked in the syrup.
- Let the figs cool in the syrup.
- Fill each fig with arequipe using a piping bag or spoon.
- Serve with a bit of the syrup on top.
Tips
- Cook the figs over gentle heat so they don't fall apart.
- The longer they sit in the syrup, the more flavor they'll have.
