Chocolate mousse
Airy and intense dark chocolate mousse with whipped egg whites.

Ingredients
- 200 g of 70 percent dark chocolate
- 4 eggs
- 60 g of sugar
- 50 g of butter
- 1 pinch of salt
- chocolate shavings to decorate
Step-by-step
Choose your robot:
- Separate the whites from the yolks and set aside.
- Put the chopped chocolate in the mixing bowl and grind 10 sec/speed 8.
- Add the butter and melt 4 min/50°C/speed 2; let it cool down.
- Add the yolks and mix 10 sec/speed 4; transfer to a bowl.
- Put the butterfly, add the whites and the salt and whip 4 min/speed 3.5.
- Add the sugar and whip 1 min more/speed 3.5.
- Fold the whipped whites into the chocolate with enveloping movements.
- Distribute into glasses and refrigerate 4 hours before decorating with shavings.
Tips
- The mixing bowl must be clean and dry to whip the whites well.
- Fold in the whites gently so as not to lose air.
