Ingredients

  • 200 g of 70 percent dark chocolate
  • 4 eggs
  • 60 g of sugar
  • 50 g of butter
  • 1 pinch of salt
  • chocolate shavings to decorate

Step-by-step

Choose your robot:
  1. Separate the whites from the yolks and set aside.
  2. Put the chopped chocolate in the mixing bowl and grind 10 sec/speed 8.
  3. Add the butter and melt 4 min/50°C/speed 2; let it cool down.
  4. Add the yolks and mix 10 sec/speed 4; transfer to a bowl.
  5. Put the butterfly, add the whites and the salt and whip 4 min/speed 3.5.
  6. Add the sugar and whip 1 min more/speed 3.5.
  7. Fold the whipped whites into the chocolate with enveloping movements.
  8. Distribute into glasses and refrigerate 4 hours before decorating with shavings.

Tips

  • The mixing bowl must be clean and dry to whip the whites well.
  • Fold in the whites gently so as not to lose air.
